Most casinos train their dealers for as many games as possible, then rotate them through the games. So no one game pays more or less if you deal it.
They casinos generally pay dealers a level wage, with an increase for seniority. The dealers then get more money through tips. But the individual dealers don’t get the tips you leave for them, these are divided up between all dealers.

Poker and craps dealers do best. Poker dealers keep their own tokes and craps dealers split them among themselves. The rest of the dealers share tokes among themselves and there are lots of them. The pit dealers are expected to know several games.
EDIT: Dealers do not get raises. They are paid mimimun wage. You make your living on tokes. In the USA.

It all depends on where you work. If you deal Blackjack, chances are you will deal most of the games you listed. Craps and Roulette are more of a specialty game. In a go for your own place dealers will usually make the most money on blackjack. Pai-Gow and Mini Baccarat are not considered money makers, they are feast or famine. Three Card is pretty good. In casinos where there is a pool all the dealers make the same amount per hour. I have worked in casinos where the craps pit pooled with the rest of the dealers, but I know that is not the case in all casinos.
There are casinos out there that will give dealers hourly pay raises, but it is not standard practice. The casino I currently work for gives yearly raises and more per hour for certain games, but it still doesn’t bring the hourly wage up to anything spectacular.
